I just have to share another of April's brilliant recipes, she sure is a master in the kitchen with this recipe being an absolute winner.
1 C rolled oats
1 C shredded coconut
½ C pumpkin seeds
½ C sesame seeds
1 T flaxseeds
1 tsp cinnamon
1/3 C coconut oil
2 T honey/maple syrup
1 grated apple
1/2 C sultanas (additive free)
In a saucepan add your honey and coconut oil and warm slightly, then add all other ingredients – except the eggs and stir thoroughly until there is liquid throughout the mixture- remove from heat.
In a separate bowl whisk the egg before pouring through the seed mixture stirring it through quickly to avoid it curdling.
Bake at 25 minutes at 200° or until just golden.
(If you need to hide the ingredients from the kids then put the dry ingredients in a food processor and blitz them up. You can also add more honey if needed).
