These cupcakes are slightly adapted from My Darling Lemon Thyme (which is my favourite wholefoods book with down to earth realistic recipes that are mainly gluten/dairy free)
Don't be put off my the amount of ingredients required for this bread, once you have made it and taste it you will just love it! It can easily be made without a Thermomix - just buy the grains as premade flours and you will be fine.

I learnt to cook this delicious dish on a recent trip to Bali which was so much fun I can't wait to try out more local cooking classes on future travels.
Seeded Muesli Bars - 200g sunflower seeds, 100g flaxseeds, 100g pumpkin seeds, 150g dried dates, 100g rolled oats, ¼ c honey, 1t vanilla powder, 2 eggs. Mix seeds and chopped dates in a bowl, blend half of the rolled oats up and add all oats to the mixture, add honey and mix. Beat eggs and pour into mixture combining well. Spread mixture and push down in a slice tin and bake for 20 mins at 180c. Let it cool and slice into squares.
