This is the first recipe that I have created myself, I have to say its a winner!
¼ C chia seeds
1 C Almonds
1/3 C Sunflower seeds
300g beetroot grated (approx 2 medium beetroot)
125 g butter
1/2 C dates (soaked overnight in enough boiling water to just cover them or even better - medijool dates)
½ t Vanilla Essence
½ C Sorgham flour
2 t Baking Powder
½ C cacao/cocoa powder
Grind almonds, sunflower seeds and chia, set aside.
Grate beetroot then add to bowl of ground nuts/seeds.
Grind dates then add butter and cream this.
Add all ingredients to bowl, combine and put into loaf tin.
Bake at 180 for approx 50 mins.
