After so many years of making it, this really is one of my favourite soups! It's a pumpkin soup with a twist, it's got lots of orange coloured vegetables in it to give you that beta-carotene boost (in other words it's so good for your immune system and of course for your eyes!). It's so flavoursome I guarantee that you will just love it. Ingredients:
1 T coconut oil 1/2 red onion roughly chopped 1 garlic clove crushed 2 carrots peeled and chopped 1 large sweet potato (kumara) chopped 1/2 butternut pumpkin peeled and chopped 1 T grated ginger 1 T vege stock (I make my own in the Thermomix, you could instead use 1L of vege/chicken stock) 1/4 t turmeric (if you have fresh then use this instead) Enough water to cover everything (if not using liquid stock) 1/2 red capsicum chopped 1/2 cup coconut milk Method; Heat oil in a large pot, saute garlic and onion until they soften but do not brown. Add carrot, sweet potato, ginger, turmeric and vege stock and water, bring to boil and simmer until veggies are soft. Add capsicum and coconut milk, then blend until smooth and serve.
