So easy to make, cost effective and a nice fresh style meal for those hot nights, or lunches, or even breakfasts! For the Patties:
1 can chickpeas (drained and rinsed) 4 cups grated vegetables - use a mix of potato/sweet potato/zucchini/carrot (squeeze out excess moisture from potato/zucchini) 1 lightly beaten egg 1 C breadcrumbs (I use my G.F homemade loaf but any will do) 1 clove crushed garlic 1/2 C coriander or parsely 1/2 C toasted seasame seeds 1 T curry powder 1 t ground cumin 1 t ground coriander pinch of salt and pepper In a food processor add chickpeas and blitz, then add all other ingredients and combine. Roll into patties at your desired size, I like medium patties and can usually make around 8 of those. Cook over medium heat until golden brown. For the Slaw: 1 apple grated 1 C mixed herbs shredded 1 C cabbage shredded Dressing: 1 T lemon juice zest of 1 lemon 2 T olive oil 1 T honey Mix all ingredients in a bowl and dress with mixed dressing. If you are not intending to serve the slaw immediately I recommend adding the apple to the dressing so it doesn't brown too much.
