So I found this recipe online when I was looking for interesting ways to use zucchinis. Immediately I couldn't wait to try it! I was totally sceptical that it was going to taste like a vegetable, wouldn't be anything like a regular brownie, or simply wouldn't be rich enough. Boy was I wrong!! This brownie has totally ticked all the boxes, I am absolutely delighted about it. I varied the original recipe and this is how I made it: Ingredients:
1 c almond butter 1 ½ c grated zucchini ⅓ c raw honey 1 egg 1 T cocoa 100g 70% cacao chocolate grated 1 t vanilla 1 t baking soda ½ t cinnamon ½ t nutmeg pinch salt Method: Preheat oven to 180 degrees. Combine all the ingredients in a blender a blitz (if you don't have a blender then a normal mixing bowl will be fine). Pour into a lined slice tin as pictured. Bake for 35ish minutes, or until a toothpick comes out clean. When cool slice and serve.
