I learnt to cook this delicious dish on a recent trip to Bali which was so much fun I can't wait to try out more local cooking classes on future travels.
300g chicken diced 1 stick lemongrass
4 cloves of garlic 2 shallots
3 bay leaves 1 large red chilli
1 small red chilli 3 macadamia nuts
1 inch ginger 1 inch turmeric
300ml coconut milk 1 potato diced
Pinch salt 1T soy sauce
Fresh coriander for serving
With a knife chop lemongrass into inch size pieces, add to TM bowl, along with garlic, shallots, chillis, macadamia nuts, ginger & turmeric.
Chop for 15 seconds on speed 6, scrape bowl down and mix again for another 10 seconds.
Add small amount of oil and place on Varoma speed 1 for 1 minute.
Add a small amount of water, a pinch of salt and the diced potato. Place on Varoma speed 1 for 2 minutes.
Add soy sauce and coconut milk then place on 90 deg speed 1 for 7 minutes.
Place chicken in TM bowl and cook for a further 8 minutes on 90 deg speed 1.
Serve over steamed rice topped with fresh coriander.
