Gourmet Omlette

In my house we like to make every meal delightful, using quality ingredients and lots of love this omlette is the most perfect start to the day (or for any time of the day infact!)
This recipe is for 2 people but to make it for one then use a small frypan and half the quantity.

4 free range eggs
1/2 red onion
2 mushrooms
8 cherry tomatoes
1/2 stick free range quality chorizo (I love Euro Chef)
a small portion of goats feta (I love Bookara)
handful of greens (spinach/rocket/kale/watercress)

Heat larger frypan with olive oil, then add finely diced onion, chorizo and mushrooms.  Once these are almost cooked add thinly sliced tomatoes then the eggs which you have previously whisked.  If using Bookara goats feta then use a teaspoon and put small dollops evenly across the pan.  Top with finely chopped greens and a little pepper.
Once it is cooked through use the spatula to cut the omlette in half and fold gently and transfer to a plate. 
Here I have served with a little Kim-Chi.
