When we were last in Thailand I became a little obsessed with this dish. So much so, that I chose it almost every day! I was incredibly stoked to learn how to make it when we went to Pai Cookery School. Here is Gaew's recipe - I hope you enjoy it as much as we did! Ingredients:
5 x garlic crushed 500g chicken sliced 5 x chillies crushed 1 T soy sauce 1 t black soy sauce (semi sweet) 1 T fish sauce 1 C holy basil leaves 1/2 onion sliced 1/2 C long beans cut small 1 T chicken stock powder 1/2 C water 1 t sugar Method: Heat a wok until the surface is hot. Swirl in the oil to coat the wok surface. Wait a few seconds for the oil to heat, then stir garlic, chillies till fragrant. Add chicken and stir for 2 mins then add water. Add the long beans and onions and after 2 mins add the rest of the ingredients. Finally add the basil leaves and serve immediately over rice.
