Kumara and Zuchinni Fritters

How good is it to start the day with a scrumptious breakfast that is actually nourishing for you!  So many variations of these exist so try this out and modify it to your tastes.  This one is from Luke Hines.
Ingredients:
1 large kumara grated
1 large zuchinni grated (the trick to this is to squeeze out the extra moisture before combining)
1/4 red onion grated
1/2 C almond meal
1 tsp dried chilli flakes
pinch of salt
2 eggs
Combine all ingredients in a bowl.
Spoon small amounts of the mixture into a medium pan (preferably frying with coconut oil or ghee).
Press down lightly on each fritter and cook until golden on each side.
In a separate pan cook bacon and extra eggs if desired.
Serve with slices of avocado and sauerkraut.
